A taste of Oman

.5kg tuna or kingfish
1 red onion, chopped
2 tomatoes
8 cloves garlic
2 green chillies
1 bunch green coriander
Juice of 4 lemons
.5 grated fresh coconut
6 tbspns instant coconut powder
1 tspn fish masala
1 tbspn ghee
Salt to taste

1 onion, grated
1 tspn black pepper
Juice of 2 lemons

Clean, wash and slice the fish. Mix marinade ingredients and marinate fish for a least one hour. Meanwhile, soak the grated coconut in 4 cups of boiling water. Allow to cool slightly, blend and strain.

Add the coconut powder, chopped onion, tomatoes, chillies, garlic and spices and blend till smooth. Cook this sauce on a low flame, stirring frequently, for 45 minutes. Remove fish from marinade and add to coconut sauce. Simmer another 15 minutes until done.

Add the lemon juice, ghee and coriander, simmer additional 5 minutes before serving.
