Whitebait Patties

Whitebait patties – coaster style

Ingredients:
• 500g Whitebait
• ¾ Cup Flour
• 2 Eggs (whisked)
• 2 tsp baking powder
• Salt and Lemon Pepper
• ½ – 1 Cup Green Fern Beer

Method:
Mix flour, eggs, baking powder, salt and pepper to a batter – then add the beer and whitebait. Cook in a hot cast iron pan over a campfire.
